Cook Once, Eat Well All Week
More adventures in Sunday meal prep. This time, I turn a bunch of whole roasted sweet potatoes into 4 very different meals to make dinner throughout the week as easy as possible.
This has been the go-to Monday night meal in our house: baked sweet potatoes, with sauteed mushrooms + spinach, topped with a fried egg. Use a little ghee instead of olive oil to do your sauteeing for extra flavor.
A pureed sweet potato soup with smoky spiced chickpeas doubles as a great lunch the next day.
Sweet potato mash makes a bed for this cauliflower, spinach, and caramelized onion stir-fry. I add extra chili flakes to my stir-fries for a good kick.
