Veggie burgers made with edamame beans, herbs, and chickpea flour and taste like falafel.
Edamame Falafel Burgers
Makes 4 burgers
Herby, green, and delicious. Vegetarian recipe with a vegan option.
Ingredients
- ¼ packed cup cilantro
- ¼ packed cup parsley
- 1 ½ cups shelled edamame beans thawed, if frozen
- ½ cup chickpea flour
- 1 medium shallot
- 1 garlic clove
- ½ teaspoon smoked paprika
- 1 teaspoon salt or to taste
- Black pepper to taste
- 1 egg or chia egg 2 tablespoon ground chia seeds + 6 tablespoons water

In a food processor or blender, combine cilantro, parsley, edamame, chickpea flour, shallot, garlic, paprika, salt and pepper. Process until well combined and you have a rough mixture — it doesn’t have to be smoothie, just well chopped and forming a bit of a dough sitution.

Transfer to a medium mixing bowl and fold in the egg until everything is well-combined. Let the mixture stand in the fridge for 20 minutes.

Form into patties. Heat a good amount of avocado or olive oil (enough to cover the base of the skillet and a little more) in a cast iron skillet over a medium-high heat. Put patties in the skillet and cook for 5-7 minutes on each side or until golden brown. Transfer to a paper towel and repeat with remaining patties.
