Cook Once, Eat Healthy All Week
Sunday food prep is a necessary part of setting me up to eat well all week.
Here’s an example of what a good week of simple meal prep looks like for me:
I made a big batch of quinoa, along with some roasted bell peppers, onions, zucchini, and delicata squash.
I made Coconut Curried Quinoa with Spinach + Vegetables. It was warming, spiced, and satisfying.
I also turned my cooked ingredients into Fajita Salad Bowls with black beans, fresh salsa, and guacamole.
